Rice Guvetch 
Serves 4, Takes 40 min
Ingredients:
- 250 gr. of rice
- 300 gr. of onions (minced)
- 800 gr. of tomatoes (sliced)
- 2 peppers (finely chopped)
- 1 1/2 dl. of olive oil
- 4 eggs
- 500 gr. of yogurt
- Paprika, salt, and pepper
Preparation:
- Preheat the oven to 180ºC.
- Golden the onions in the oil in a frying pan, add the rice and the peppers.
Once all the ingredients are golden, add salt, pepper and paprika
- Place the tomato slices at the bottom of a baking dish and then add the
rice, another layer of tomato slices to cover the rice completely.
- Add some oil and a half a glass of water. Put in the oven for about 15 min.
- Beat the eggs with the yogurt and spread on the rice mix. Put back in the
oven (on broil this time) until a golden crust is formed (5-10 min).
Comments:
I suggest you serve this recipe as the main meal as it is somewhat filing.
